Homemade salmon fishcakes

Ingredients

  • 200g tin of pink or red salmon (drained, with skin and bones removed)
  • 1 egg, beaten
  • 250g cooked potato, mashed
  • 50ml light olive or vegetable oil
  • Organic white breadcrumbs (about 2 slices)

How to make it

Flake the salmon and mix with the mashed potatoes. With floured hands, form 4 fish cakes. Then dip the fish cakes into beaten egg before rolling in breadcrumbs.

Finally, fry the fish cakes in a shallow pan for 2-3 minutes on each side until crispy and golden.

Portion sizes will vary according to your baby’s age and appetite so adjust the amounts used accordingly.
