Quick and easy muffins

Ingredients

  • 150g caster sugar
  • 150g wholemeal self raising flour
  • 150g soft butter or margarine
  • teaspoon baking powder
  • 3 eggs
  • Finely grated zest and juice of 1 lemon

How to make it

Preheat the oven at 200°C/gas mark 6. Place all the ingredients in a bowl and whisk on a medium setting until all the ingredients are combined. Then whisk on a high setting for 5 minutes. Finally spoon the mixture into muffin cases and bake for 20-30 minutes until golden brown. Cool on a wire tray. For an added touch, stir in 50g raspberries or blueberries just before spooning into the muffin cases.

Portion sizes will vary according to your baby’s age and appetite so adjust the amounts used accordingly.

    i love these & so does the rest of the family, the only thing i had a wee gripe with was the amount of sugar, i now only use 75g as the fruit sweetens it & they are just as nice. overall nice & quick & easy to make. :)

    Hi, when mixing your ingredients together try putting your whisk at an angle, to incorporate as much air into the mixture as possible. Also the cooking time will differ according to what oven you use. One easy way to know when they are ready is to gently poke the top of the muffin and if it springs back up again, they are ready!
