They actually become sweeter if there is a light frost before they are harvested. Little by little, the parsnip is finding its way back into our kitchens. Even though it had already played a very important role in the diet of the ancient Romans, it was replaced due to the rise of the potato and other vegetables. When it comes to baby food, the parsnip is regaining popularity due to its mild flavour. It is one of the favourite ingredients for the introduction of weaning food.
