About the variety
With wheat, we at HiPP do not use any specific variety. Depending on the organic HiPP product, we use either durum wheat or common wheat that has been processed into flakes, flour or semolina. The grains of durum wheat are harder than those of common wheat. Durum wheat is firm and provides a consistent cooking quality, which is why it is well suited for the production of pasta, couscous and bulgur. Common wheat, on the other hand, has a higher starch content, which is why we use its flour in our HiPP Organic baby cereal.
